The Proof
This single-varietal Bourbon comes from Finca La Joya in Dipilto, Nueva Segovia, Nicaragua, where it is grown by Ibis Garcia, a farmer dedicated to cultivating coffee with care and respect for the land. Ibis’ natural process includes fermentation of 78 hours, this creates a slow and methodical process that gives this coffee a comforting sweetness.
The Cup
Unlike most natural coffees that emphasize bold fruit flavors, this Bourbon expresses a softer, more classic profile. Drying the coffee with the fruit intact develops layers of sweetness, revealing notes of maple syrup, dates, and dulce de leche.

The Story
The first time Carlos was invited to Ibis’s farm, 2021, he stumbled upon a coffee plant with three cherries. Carlos asked Ibis why he was keeping this plant with a small yield. Ibis explained that it was an old Bourbon plant, planted by his Dad. He explained if he eliminates this plant he would be losing a coffee flavor profile missing in new varietals . He called this, “eslabon perdido” (missing link). Ibis would later use those three cherries as seed to grow this Bourbon.
