Our story holds our standards.

A celebration of flavor, culture and community from our homeland to our hometown.

Bonito is

Specialty Coffee

Specialty coffee is defined through a rigorous and holistic evaluation of quality, including sensory attributes, consistency, traceability, sustainability, and social impact. Beyond a score, it reflects the care, expertise, and conditions that shape each coffee. This approach supports transparency, rewards excellence, and helps create a more equitable and resilient coffee system for both producers and consumers.

Bonito is

Mold Free Coffee

Central America’s abundant sunshine plays a vital role in producing mold free coffee. When paired with attentive harvesting and careful sun drying, these conditions allow the beans to dry evenly and fully, reducing moisture and supporting a clean, stable process.

Bonito is

Craft Coffee

Craft coffee is about intention and care at every stage, from how the plants are grown to how the beans are roasted. It is made in small batches, guided by relationships, skill, and a commitment to quality rather than speed or scale.

Travel with us

to Carlos’ homeland of Nicaragua, where Bonito finds its roots and continues to build Farm Direct relationships with the farmers who grow our coffee. These are personal connections, many formed over a lifetime, grounded in trust, shared history, and care. Our coffee is shade-grown in high-altitude jungle farms and roasted locally in our hometown of Ojai, California, carrying with it the stories of community, family, place, and memory. We offer carefully sourced single origins, artfully crafted blends, and rare heirloom naturals.

Farm Direct

From Our Homeland

Carlos grew up among the jungle farms of the mountains in Nicaragua. His lifelong relationship with the land and farmers that tend it guides how we personally select each one of our single-origin and heriloom beans.

Roasted Fresh

In Our Hometown

Our coffee is roasted in small batches in Ojai, CA. We familiarize ourselves intimately with each varietal, from the land where it was grown through processing to the final roast. Every coffee is carefully crafted to express and highlight its distinct and natural flavor.

We source directly from small, privately owned family farms in Nicaragua, many of them run by friends and relatives. These long standing relationships ensure transparency, fair trade, and shared care for quality. These farms meet organic pesticide standards, promote biodiversity, and uphold generational farming practices that sustain both the land and the communities behind each harvest.

Our coffee is grown in high-altitude mountain farms surrounded by the biodiversity of the jungle. Shade-grown coffee matures slowly under the natural canopy of trees, allowing complex flavors to develop while protecting soil health and wildlife. This traditional method eliminates the need for pesticides and supports thriving ecosystems.

Diversity is what allows all systems, may they be ecological, cultural, and/or human, to thrive. We celebrate that truth by supporting traditional growers in Nicaragua and Mexico, preserving heirloom varietals, and sourcing from biodiverse ecosystems that nurture healthy land, rich culture, and vibrant communities.
