The Proof
This washed Bourbon is grown by Sidartha Moses and his family at Finca La Pila in Apaneca, El Salvador, at an elevation of 1500 meters. This coffee is grown in a coffee garden, making it a nano lot, located behind their family home.
The Cup
Washed processing reveals the true character of Bourbon with remarkable clarity. Notes of marzipan, chocolate, and cinnamon create a cup that is balanced and delivers a classic coffee profile.
The Story
While many Bourbon trees across Central America were replaced after coffee leaf rust devastated the region, Sid and his family chose to trust the land and preserve theirs. Today, those same trees continue to produce a flavor that is hard to find in newer coffee varietals. Bonito began with a small batch of coffee that Sid carried by airplane from his family’s farm. Together, they helped export the family’s coffee for the first time. Every harvest is a reminder that some of the best coffees are made patiently, over time.
