Single-Varietal heirloom, natural from Finca La Joya, in the region of Dipilto, Nicaragua.
Bourbon was one of the very first coffees we ever roasted at Bonito. This limited heirloom comes from Finca La Joya in Nueva Segovia, Nicaragua and is grown by Ibis Garcia. This is a naturally processed coffee meaning that the cherry is sun-dried on the seed before further processing. What it yields is something increasingly rare: a classic Bourbon flavor profile with depth, softness, and old-school character.
During the coffee leaf rust crisis that swept through Central America in the 1990s and early 2000s, many farmers cut down their old Bourbon trees and replaced them with high-yield hybrid varieties.
Ibis has preserved these heirloom plants. He's a skilled agronomist working sustainably with the land and imbuing his beans with rich, nuanced flavor that celebrates the diversity of coffee.
